I have a very simple cheesy version to offer...
Beat the egg well with salt and pepper
Heat the pan, add 1/2 tsp oil, pour in the beaten egg..
As the omlette is half cooked, place a slice or two of cheese on top of the omlette. Wait till the omlette is cooked. There is no need to turn this over. You may do so if you wish, but the cheese may get way too messy.
